Meatballs with cottage cheese and veggies
Disclaimer....I am not a chef.
I don't play one on t.v., and I rarely even play one in my house. Ok, that's less true; I do take my turn cooking, usually when I find a new high protein recipe I want to try.
Recently though, I was on a search for meatballs that included both veggies and cottage cheese, and so I combined two recipes to make that happen.
It’s not pictured here, but I also added a little bit of Rao’s tomato sauce.
I'm going to assume that it was the parmesan cheese that gave these good flavor, but either way, this was a an excellent staple that I'll be keeping in the rotation.
I generally eat them served over zoodles.
Ingredients: 1 cup cottage cheese
1.5lb ground meet (beef, turkey, or chicken..I used beef)
1/4 cup grated Parmesan cheese
1 egg
1/2 cup whole wheat bread crumbs
1/2 cup shredded carrots
1/cup shredded zuchhini
1/2 tsp garlic powder
1/2 tsp onion powder
Eyeballed the salt and pepper
Instructions:
Preheat oven to 375F. In a large bowl, combine cottage cheese, ground meat, parmesan cheese, egg, veggies, garlic powder, onion powder, salt and pepper. Mix until well combined. Roll those puppies into balls and slap them on a baking sheet. I actually put mine on a baking rack on top of the baking sheet because I'm fancy like that. Cook for 20-25 minutes, or until the internal temperature is 165.
